Prep Work Day

By the time most of you read this post I will be "busy busy" working on preparing all the food for one of the events of the Festival.

Over the weekend I went shopping for fresh produce because I was craving risotto.This time I made it with tomatoes, radicchio, and baby bella mushrooms.

Tomatoes and risotto type rice

Quick directions: For two servings use one cup of rice. Saute on a medium pan with oil at medium heat one large garlic clove finely chopped until it starts to brown, add the rice and stir it until its fully covered with the oil. Add your choice of chicken or vegetable stock enough to cover the rice and stir until it's  has been absorbed by the rice. Repeat this step two more times or as needed. For added flavor you can substitute wine for the last addition of liquid. Add the tomatoes and mushrooms, cook until the liquid from the tomatoes and mushrooms has been absorbed, the rice has a thick consistency and it has cooked but it's not mushy. Add the juliened radicchio and serve on a pasta bowl. Drizzle olive oil and ad some Parmesan shavings.


 I always play with the ingredients when I make risotto... It's more fun!

  5. This looks delicious! I love rissotto but I've only ever tried to make it once and it was a complete disaster! Perhaps I should try again
